Half share, price per pound

Hanging weight is the carcass weight before cutting. Where a farm charges the butcher's fee separately, it is added in. Farms that price by packaged weight or by the share are not on this chart, so check their cards below.

    Beef in your freezer-

    Freezer space-

Assumes 60 to 70 percent of hanging weight comes home as packaged beef, and about 35 lb per cubic foot of freezer.

    How it works

    1. Reserve your share

Pay a deposit to hold your spot. Many farms sell out months ahead.

    2. The farm books the butcher

Many farms give you the processing date when you reserve.

    3. Choose your cuts

A short cut sheet sets steak thickness, roast sizes, and how much is ground.

    4. Bring home your beef

Pick up frozen, wrapped packages. Bring coolers and clear your freezer first.

    What is hanging weight?

The carcass weight before the butcher cuts and wraps it. Most farms charge by it, so the beef you take home weighs less.

How much beef comes in a half?

It depends on the animal. JS Lowland Cattle lists a half at about 225 lb hanging weight. Shipley Farms Beef says a half comes to about 175 lb of packaged beef.

    Grass-fed or grass-finished?

Farms use these words differently. Grass-finished usually means grass and forage right up to harvest. Ask the farm what its cattle eat in the final months.

How much freezer space do I need?

About one cubic foot for every 35 to 40 lb of packaged beef. The cost calculator does the math for your share.
